Has anybody discovered any better keymappings they'd like to share?

Nothing drastic, no, but I will note that if you have a Wiimote and can map it's accelerometer output to joystick controls you can control 6 degrees of freedom simultaneously and precisely. With a Nunchuck another 8, though it's rotation sensing isn't as good as the Wiimote's.
